Course Details

Course Summary

Learn basic skills and knowledge in a range of activities and functions required in hospitality. Work would be undertaken in various hospitality settings, such as restaurants, hotels, motels, catering operations, clubs, pubs, cafes and coffee shops. This program can be completed as part of a traineeship. This qualification reflects the role of individuals who use a defined and limited range of hospitality operational skills. They are involved in mainly routine and repetitive tasks using practical skills and basic industry knowledge. They work under direct supervision.


Entry Requirements

Completion of the BKSB (Basic Key Skills Builder) online literacy and numeracy assessment prior to enrolment, unless the student has completed an equal or higher level course.

There are no other entry requirements for this qualification.


Vocational Placement and Work Integrated Learning

Students must complete a Vocational Placement and/or Work Integrated Learning as part of this qualification.

Additional information

Practical skills must be demonstrated in an operational food and beverage outlet or simulated environment such as a pubs, clubs cafes or restaurants.Students not currently working in the industry, or who do not have access to workplace simulated environments will need to discuss this with the teaching team.

Study Mode Definitions

  • Online: Online courses provide the flexibility to study without normally requiring a student to visit a campus. Course content is studied through a number of means including the use of online discussion forums, electronic library resources, by contacting lecturers and teachers, and receiving study materials online/electronically. Work integrated learning, including placements, may be included in some courses.
  • On-campus: Students studying in on-campus mode typically are expected to attend and participate in regular, structured on-campus teaching and learning activities throughout the University’s academic term. These activities may include lectures, tutorials, workshops and practice, online or other activities and normally will be timetabled at a CQUniversity campus or approved delivery site.
  • Mixed Mode: Students studying in mixed mode will participate in a combination of online learning activities in addition to site-specific learning activities, which may include residential schools, co-op placements and/or work-integrated learning as a compulsory requirement of a unit. The additional site-specific learning activities are what differentiates a mixed-mode unit from an online unit.

Course Assessment Information

RPL - Students who have previous informal and formal learning need to advise their trainer/assessor prior to enrolment. If the student wishes to apply for an RPL they need to apply to the RPL Centre.
Credit transfer - If credit for relevant formal qualifications is sought, then the process will be actioned after the student has enrolled in at least one unit of competency as directed by the relevant trainer/assessor. The Trainer/Assessor will work with the student on their credit transfer application, and provide advice and support as necessary.

Skilling Queenslanders for Work Initiative

Community organisations successful in their application with the Queensland Government have access to the Skilling Queenslanders for Work initiative. This funding can assist students, who meet the eligibility criteria, apply for a place in their community organisation’s project. Further information about the initiative can be found at https://training.qld.gov.au/home/sqw


The following community organisations have a partnership agreement in place with CQUni, as the preferred Registered Training Organisation. This partnership gives these organisations the ability to recruit students within their community who meet the eligibility criteria set by the Department of Education and Training, and send through documentation to enable CQUni to process the pre-enrolments.

Third Party Services arrangement

Bowen State High School provides the following services on behalf of CQUniversity for this course:

Practical Skills Additional Information

Practical skills will need to be demonstrated in the hospitality industry or simulated Training environments at CQUniversity Mackay City or CQUniversity Rockhampton City. 


Students not currently working in the industry, or who don’t have access to workplace simulated environments will need to organise this in consultation with teaching staff.


SITHIND003 - Use hospitality skills effectively requires evidence of a minimum of 12 service periods (shifts). Each service period is to be recorded in a service logbook, clearly numbered and dated. Service logbooks will be provided by teaching staff after enrolment.


Uniform Requirements

All students are required to wear a uniform for this course.


  • Black skirt or pants (not jeans) must be worn on restaurant operation days.
  • Black enclosed dress shoes are mandatory when working in the restaurant. 
  • Covered footwear is required on campus at all times. 

Rockhampton students are required to purchase a 'Willby's Training Restaurant' polo shirt from the CQU Bookshop phone 07 4930 9421 on North Side Campus.


Mackay students are required to purchase a black “Hospitality Polo” from the CQUniversity Mackay Bookshop. The teachers will supply students with a sizing chart on the first day of class. 


Start TAFE Now (STN) Dual Qualification

Start TAFE Now (STN) students can choose to complete a dual qualification from two of the three qualifications listed below. The two courses will be completed over a period of two years:


  • SIT20316 - Certificate II in Hospitality
  • SIT20416 - Certificate II in Kitchen Operations
  • SIT20116 - Certificate II in Tourism
